You can remove the percentages for weekly en monthly discount totally in the "lenght of stay" section:

But if you want to set custom prices which overrule normal discounts in certain periods,  scroll to bottom of Help page and read " custom pricing "

If you use the multicalender, you can also create a rule set to set custom discounts, and add the rule set to a certain period, like high season etc..
